I made this salad recently to accompany a barbecue we had. I wanted to change things up a bit and make something a bit different to the ‘usual’ green salad that I would make.
It was a hit and so delicious. A great summer salad for entertaining but also great to take to work for lunch. I had it the next day with leftover chicken from the barbecue and it was delicious.
1 cup of cous cous
2 cups of chicken stock
1/2 continental cucumber
1 punnet cherry tomatoes
Lettuce salad mix
Make up cous cous using 2 cups of chicken stock – allow to cool.
Cut up carrot and cucumber into small pieces, cut cherry tomatoes in half and slice avocado.
When the cous cous has cooled, add in ingredients listed above and the lettuce mix. Mix together gently.
Mix some olive oil and lemon juice together and drizzle over the top and enjoy!
As mentioned above this is a great salad to accompany a barbecue but also great to mix with chicken for an easy and healthy lunch.
