This is my go to recipe for a quick and healthy salad for lunch.
I always have four bean mix and corn kernels in the pantry as well as carrots, so this is my base and then I can add in any other salad items we might have in the fridge.
Healthy and Easy Bean Salad
1 x can of four bean mix
1/2 can of corn kernals
Peel carrot and cut into half lengthways then slice.
Cut tomato into cubes
Cut cucumber in half lengthways then in quarters lengthways and then slice
Mix in a bowl with four bean mix and corn kernels and enjoy!
This mixture is enough for two lunches. Make one for you and your hubby. If not, it will be lunch for you for two days – bonus!
If you want to mix it up a bit, add in some tuna, chicken or change up the salad items added.
I love four bean mix and it is a great base for an easy lunch to take to work.
