{RECIPE} Banana and Honey Muffins

A couple of weeks ago I had some bananas that needed to be used.

Often I’ll make banana muffins or freeze them to use in my smoothies.

This time, I got out a recipe I haven’t used for a while.

This time I decided to mix the muffin mixture in my Thermomix.

I took these into work and they were a hit for morning tea with my colleagues.

Ingredients

300g self raising flour

150g brown sugar

75g butter

125ml milk

2 eggs

2 mashed bananas

3 tablespoons honey

1 teaspoon vanilla essence

1 teaspoon ground cinnamon

Directions

Preheat oven to 180°C.

Place all ingredients in the thermomix and mix for 20 seconds on speed 4.

Scrape down the sides of the bowl and mix for a further 10 seconds on speed 4.

Spray your muffin tray with canola spray.

Spoon mixture into muffin tray.

Place in the oven for 20-25 minutes or until cooked through.

Turn out onto a wire rack to cool.

Enjoy!

These are the perfect muffins to share with family or friends with a cuppa, as a snack in the kids lunch boxes or a snack for you to take to work.
